I still remember the smell of my grandmother's kitchen at 5 AM. The rhythmic sound of the stone chakki, the aroma of fresh flour filling the air, and the taste of that roti—sweet, nutty, and incredibly soft.

As we moved to the city, that taste disappeared. The bright white packet flour we bought suddenly felt lifeless. It was just starch, stripped of its soul.

We realized we weren't just losing flavor; we were losing health. That's when we decided to go back to the roots.

Earlier, we thought gobar was old-fashioned. But when chemicals became expensive and soil became hard, I returned to cow dung manure and jeevamrit. Now the soil stays soft, moist, and alive. Earthworms are back. My rice doesn't grow fast—but it grows strong.

FINDING THE REAL GRAIN

The journey wasn't easy. We traveled across 14 districts, meeting over 200 farmers. We were looking for something specific—grains that hadn't touched chemicals.

We found that most modern wheat is bred for machines, not humans. It's tough, high-gluten, and hard to digest.

Then we found the indigenous varieties Khapli, Emmer, and Sharbati. Grains that grew tall towards the sun, fed only by rain and compost. This was the gold we were looking for.
